From the President's Perch

Howdy PHlockers!

Woo wee this year has been quite the whirlwind so far. Here we are, over a third of the year has passed. Your Board of Directors has been doing a great job of taking care of business and getting our club aligned for success.

Big shout out to Kelli, Michelle, and Rob for all of their work getting our website set up and working. The RITS website and all of the functionality of the site is awesome. Having tools that work has been a true blessing and I’m not sure we understand all it can do for us, yet!

Riddles is right around the corner, we are well past 50% on registration. All of the bands are booked. Reservations are in place and we are set to have one of the best Riddles ever! We say that every year, don’t we! LOL Riddles won’t go over with the success of previous years without the involvement of volunteers. Lots of help is needed and the more people that help out, the less stressful it is on the ones doing the work! If you can, get with any board member and see what committees may fit your bailiwick and jump in feet first! All are welcome. We also still need donations for RITS silent auction baskets and Liquor for our version of a cork pull. If you can help, please do.

Another shoutout to Mari, she has been very diligently working a 50/50 drawing whenever the situation allows. The purpose of this is to help bring some funds into our coffers to try and prevent the need to go up in club annual dues. As it stands dues are $20 and we end up spending well over that on the Christmas party alone. So to keep us from losing money we are evaluating the need to increase dues next year.

Check out the new website. There you will find all the information you could ever ask for including a calendar of events which Beverly is doing a PHantastic job of keeping it updated.

How could I close this out without a huge shout-out to Rob for all of the work he is putting in on arranging Happy Hours. Not only is he doing a great job setting up and scheduling some Great Musicians for you, he is also scrambling to make sure we always have a suitable venue for our events.

All in all, I am sure I have overlooked some, but rest assured you are not unnoticed. Many thanks to everyone who is/has/will work to propel our club to greater levels. Remember Galveston Bay is a whole nuther world!!!

Cya later!

The Purpose of Our Partying

During January & February, we asked you to donate socks – and donate you did!  We collected 422 pairs of socks and donated them to Galveston Street Outreach, serving homeless individuals and families in the neighboring areas. The socks were given to families over two weeks according to Rick  Henson from the Outreach Program. Did you know that new socks were the number one requested item in homeless shelters?

In March, we held the Bayou Bubba Chili Cook-Off, benefiting Noah’s Ark Bayou Sanctuary. Your generosity allowed us to send them a check for $2000 in addition to the supplies we collected. Pam Sanidakos, President of the Sanctuary stated,  “We are eternally grateful that your club chose us once again to be the recipient of the "Bayou Bubba" Chili Cook-off. We sincerely appreciate your love and support for all these years for all of our now senior rescues. Your help keeps The Sanctuary open for more innocent lives to be saved.”

Thank you for all your donations!

Riddles Donation Drive is On!

It's that time of the year again for our Riddles team to begin gearing up for this year's event. Items to be used for silent auction baskets, live auction items, raffle items, and cork pull/lucky draw liquor will be appreciated as we raise money for our primary charities: Lighthouse Charity Team,  Alzheimer’s Association, and Shriner’s Children Hospital. Please think about what you might have to donate or who you might know who would donate to the club. We are looking for gift cards, event tickets, destination stays, sports memorabilia, unopened bottles of premium liquor, along with all sorts of neat stuff to create the fabulous baskets that everyone enjoys bidding on every year. Thanks in advance for your continued support.

Tips from the Webmaster

We need your help with updating your join date. Log into the website and click edit profile. Go to the bottom of your profile information and you will see "Join Date." Add your join date and click save. If you can't remember the exact date, month, and year or even year is fine. Updating your join date is important because it allows us to keep accurate records. When the old database was shut down, it did not save join dates correctly.

Alan Coffman Endowment Scholarship Established

The William Alan (Pelican) Coffman Family and the Galveston Bay Parrot Head Club (GBPHC) are proud to announce the establishment of the Alan Coffman Scholarship through the creation of the Alan Coffman Scholarship Endowment.

Alan, or “Pelican” (his Parrot Head name) as a kind and caring man who never met a stranger. His story-telling skills and ability to make everyone feel welcomed brightened the lives he touched. And his commitment to help local charities through various fund-raising events spread his impact even further.

Managed by GBPHC, the endowment will enable GBPHC to annually award a scholarship to a high school senior graduating from a Greater Galveston Bay Area high school. The recipient will be selected by the Board of Directors of GBPHC. By establishing this scholarship, the Coffman Family will be able to continue the impact Alan has had on lives throughout the area.

To directly contribute, please address checks to the Alan Coffman Endowment and mail to P.O. Box 1277, Kemah, Texas 77565 or click the link below to use PayPal.

Jimmy Buffett Pasta Salad

from The Food Hussy

Jimmy Buffett Pasta Salad is a delicious main course or side dish! Filled with everything you love about a cheeseburger: burger, pickles, cheese, onions and more! Whether you're wanting a fun dinner or a perfect potluck dish - this is it!

INGREDIENTS

16 oz rotini pasta

2 tbsp olive oil

1 small yellow onion

2 cloves garlic minced

1 tsp salt

1 tsp black pepper

1 lb ground pork or ground beef

1 cup cherry tomatoes

1/4 cup red onion diced

1 cup pickles chopped

1 cup lettuce shredded

2 cups cheddar cheese grated or small cubes

1/2 cup mayonnaise

1/2 cup ketchup

INSTRUCTIONS

Cook pasta to al dente according to the package instructions. Drain the water from the pasta and place the pasta in a large bowl. Set aside to cool.

While the pasta is cooking, in a pan over medium heat, add the olive oil, onion, and garlic. Season with salt and pepper. Sauté the veggie mixture until soft and fragrant, about 2-3 minutes.

Add the ground meat to the veggie mixture and brown until no longer pink, about 7-10 minutes.

Drain the excess grease from the meat and let cool.

In a large mixing bowl, add pasta, cooked ground meat & onions, tomatoes, red onion, pickles, lettuce, and cheddar cheese. Stir to combine.

In a small bowl, whisk together ketchup and mayonnaise until smooth.

Pour the salad dressing over the salad and toss to combine.

Plate and serve with bbq chips. It's fine to serve if it's still a little warm. Garnish with fresh Italian parsley.

T-Punch Cocktail

In honor of the song, "T Punch Cafe" on Jimmy's new album, here's the recipe for a T Punch cocktail. Don't say I didn't warn ya!

"A popular drink all over the French West Indies. This apéritif is consumed on a daily basis. Ti is patois for petit which means small. However don't let the size fool you it packs quite a punch! Ça chauffe le coeur et les entrailles! You'll speak French for sure! With only three ingredients, it couldn't be any simpler but I implore you to use a good quality rum. Translated in part from sous-les-cocotiers.com"

INGREDIENTS

2 ounces white rum (50 to 55 proof or dark rum from 43 proof)

1 teaspoon brown sugar (if using dark rum use a little less sugar. You will have to experiment to find what suits you) or 1 ounce cane sugar syrup

1 lime

DIRECTIONS

Pour the syrup or sugar in a glass.

Squeeze half of lime into a glass. After squeezing go ahead and drop it into the glass. Cut a slice from the unused half and use to garnish the rim of the glass.

Add the rum and swirl the glass slowly with love.

Breathe in the sweet perfume which arises and let yourself soak up the flavours of Les Antilles.

Your punch is almost ready, all that is left now is to sip it slowly among friends and -- with moderation! Seriously one of these is enough if you don't intend to be comatose before the meal.
